I've lived here for 17 years and I still can't get enough every time, I go swimming! Zákynthos is green and lush compare to the Aegean islands where one would find more arid, dry and rockier terrains. You probably won't find all white little village houses stuck against the mountain faces but more of a [...]
Summer's here Hi guys! Oh my gosh what a week it's been! The summer season has finally come around once again. Thank goodness for that, cause anymore winter talk and I would actually start to cry! Winter has been far too long, too wet (ok right in the beginning) and very smelly! Thanks to [...]

Apple and cinnamon Pancakes Apple and cinnamon pancakes 2 Cup Whole wheat flour (Or normal flour)1 Egg1 Cup Milk1/2 Teaspoon Cinnamon1 Teaspoon Vanilla essence2 Clove sticks1 Teaspoon All spice1 Grated Red or green appleTo make chunky apple sauce2 Chopped apples (Red or green)3 Tablespoons Brown sugar1 Teaspoon Cinnamon2 Clive sticks3 Table spoons Butter1 Teaspoon Vanilla essence (Or a vanilla pod scrapped) I would suggest you prepare and get the apple sauce ready and let that simmer as you are flapping and tossing pancakes.Cut up the apples into bite size and place in a pan. Add to it all the ingredients except the butter. As everything is combining and sugar is starting to caramelise add a splash of water. Mix it around and then add in the butter. Leave to caramelise and starts to bubble. Take and place aside.Start with placing the flour, baking powder, cinnamon, clove, mixed spice in a bowl. Make a well in the middle and pop in the egg, together with vanilla essence. Before adding the milk grate in 1 apple. Pour in the milk and start mixing. Beat it gently until you get a smooth thickish batter. If your batter is too runny add more flour. If its too think you can add in more milk or some water (reducing calories!) once all that has combined put a pan on med high heat and test with a tiny drop of batter if it’s hot enough to continue. Pour in a laddle of batter at a time flattening and spreading it out to create a nice thin pancake. They are probable not going to be as thin as crepes but you could adjust your batter to how thin you want it to be. A good batter in my eyes is when you start seeing little holes forming as it’s cooking. Flip and continue. Stack and pour over the apple sauce! Indulge, with some vanilla ice cream or fresh Chantilly cream. […]

Zakynthian Grape and Wine season It's grape season and we are blessed with an impressive harvest this year. I've been trailing Nick (hubby) across our vineyards learning the ropes. I've always had a keen interest in wine making but never got involved-typically only to state at the table, my utter disappointment of a [...]
