Carb-free Vanilla and Coconut Granola
This recipe was inspired by my mom who had just come on a holiday from South Africa to visit us all. She had brought her granola with her from a store the called Woolworths! Miss this shop so much, the food section is unbelievable and reminds me of Marks and Spencer's food market. Anyway this granola is carb free! This is what's nice about it, it has no fruits bits- more sugars but just seeds and nuts. It's base is coconut flour which gives a biscuity kind of texture making you think that's its definitely carba-loaded. Well she left the packet for me cause it was really just delish. And you can imagine when it finished I wasn't to happy about the situation so I needed to get cracking and come up with a solution my version of Woolies' clever carb granola.

- 1 cup of almonds crushed
- 1 cup of pumpkin seeds
- 1 cup of sunflower seeds
- 1 cup of coconut flour
- 1 cup of coconut sliced pieces
- 1/2 cup of flaxseed or linseed
- 1/4 chai seeds
- 2/3 caps of vanilla essence or a vanilla pod
- Honey/ Algave to drizzle
- 1 Cup Walnuts, chopped
In a bowl add all the ingredients except for vanilla and honey
Slice down the middle of the vanilla pod and scrape out the seeds, place it in the bowl. Take a spoon and mix all the contents around until everything is nicely combined.
Lay out a piece of baking paper or baking sheet down into a baking tray and evenly spread out the nuts and seeds. Drizzle thinly honey all over.
Bake in an medium oven until the nuts have gone golden. Turn and mix them all around and bake again. You may need to do this a couple of times until eventually everything is nice and toasty. Let it cool in an open oven and then place into a tight glass jar or glass
