Apple and cinnamon pancakes

  • 2 Cup Whole wheat flour Or normal flour
  • 1 Egg
  • 1 Cup Milk
  • 1/2 Teaspoon Cinnamon
  • 1 Teaspoon Vanilla essence
  • 2 Clove sticks
  • 1 Teaspoon All spice
  • 1 Grated Red or green apple

To make chunky apple sauce

  • 2 Chopped apples Red or green
  • 3 Tablespoons Brown sugar
  • 1 Teaspoon Cinnamon
  • 2 Clive sticks
  • 3 Table spoons Butter
  • 1 Teaspoon Vanilla essence Or a vanilla pod scrapped


  1. I would suggest you prepare and get the apple sauce ready and let that simmer as you are flapping and tossing pancakes.
  2. Cut up the apples into bite size and place in a pan. Add to it all the ingredients except the butter. As everything is combining and sugar is starting to caramelise add a splash of water. Mix it around and then add in the butter. Leave to caramelise and starts to bubble. Take and place aside.
  3. Start with placing the flour, baking powder, cinnamon, clove, mixed spice in a bowl. Make a well in the middle and pop in the egg, together with vanilla essence. Before adding the milk grate in 1 apple. Pour in the milk and start mixing. Beat it gently until you get a smooth thickish batter. If your batter is too runny add more flour. If its too think you can add in more milk or some water (reducing calories!) once all that has combined put a pan on med high heat and test with a tiny drop of batter if it's hot enough to continue. Pour in a laddle of batter at a time flattening and spreading it out to create a nice thin pancake. They are probable not going to be as thin as crepes but you could adjust your batter to how thin you want it to be. A good batter in my eyes is when you start seeing little holes forming as it's cooking. Flip and continue. Stack and pour over the apple sauce! Indulge, with some vanilla ice cream or fresh Chantilly cream.
